I LOVE LOVE LOVE pickled beets. it's perhaps my favorite veg. They get the royal treatment here at Chiot's Run. They get Weck canning jars and all organic vinegar & sugar MMMM. I just made a batch from the Joy of Pickling that included red wine, red wine vinegar, sugar, cinnamon & cloves. The syrup was soooooo good, I can't wait to try the beets when they're finished. It may become my go-to beet recipe from now on.
I can get through any winter with enough pickled beets. Which is good since I live in Maine. I've always done mine with cabbage and red peppers, a sort of slaw. I'm intrigued by yours. I might swoon for yours. Recipe?
How could the White House plant a garden and not plant beets?

I'll just ditto everyone here - I love pickled beets. The only problem is, I'm the only one. Doughbird's aversion to vinegar is to the point that I can't pickle a thing when he's home. So, no pickled beets this year.
Whenever I boil the beets, I get this overwhelming urge to throw something, anything white in the pot to see the lovely shade of fuschia it becomes.
I just had a wonderful snack of canned beets (not my canned beets as I did not can beets, anyhow.. my favorite. I love the color too, must run in the family. I was thinking of throwing in some wool to see what it would turn out like :)
i love beets too. they are so beautiful. and the smell of them cooking - so earth and delicious. they were my favorite baby food to make, just for those reasons!

Dare I say this? I've never eaten a beet. They always 'scared' me when I was a kid. I suppose I should be a big girl about it now and try one.

Yum! I love pickled beets too. I try to can enough for two years....and this year is an off year. Does it feel like fall in PA? It sure does here!

Yum, beetroot we call it down here in NZ - I love it roasted, pickled, grated raw, in a cold soup and especially a relish my friend makes with it.
